Two Recipes I Have to Try
One: Mocha Coffee-Late-Morning Booster
Ingredients: Throw in the blender.
1/2 oz dark chocolate, melted
1 Cup pre-brewed coffee, chilled
3/4 cup plain low-fat Greek yogurt
1/2 cup unsweetened almond milk
1 Tblsp stevia
1 banana
2-3 ice cubes
Two: Easy quick breakfast. This came from Blue Bottle, the company that carried the Yemen coffee I mentioned on the last blog post. They say this is their customer's favorite. I'm making it today, so in the morning we'll see.
2 cups rolled oats
2 cups oat milk
1/2 cup dried cherries
1/2 cup dried blueberries
6 Tblsp pumpkin seeds
6 Tblsp. sunflower seeds
2 Tblsp. chia seeds
2 Tblsp. pure maple syrup
1 Tblsp. pomegranate molasses (I haven't found it either. maybe a little honey or brown sugar.)
1 Tablsp. pure vanilla extract
1/4 tsp kosher salt
1/4 tsp freshly ground nutmeg
In a large bowl, mix all the ingredients together. Cover and refrigerate overnight or up to 5 days. Scoop into bowls and serve.
